We had grilled some boneless chicken breasts, I had an acorn squash that needed to be used so I made an acorn squash healthy macaroni and cheese, and steamed green beans with a piece of cooked bacon.......Total Yumminess..........
For the Mac and cheese:
The noodles in my mac and cheese are rotzoni garden delight noodles made of spinach, carrots and spinach. I used 6 ounces of noodles. The "Cheese sauce" is a cooked acorn squash, skim milk 1/4cup, light butter 2 table spoons, paprika, salt, 2.5 oz shredded cheddar, and 4 wedges of light laughing cow swiss cheese blended in food processor and then mixed with the noodles, topped with 1/4 cup panko bread crumbs, and bake in oven until panko browns............214 Calories for 1/6th of an 8X8
