Healthy lunches and snacks for gaining weight?

I don't really eat big breakfasts or dinners, but snacks and a large lunch. I'm trying to gain 5-10 pounds by July '13 and wanted to know if anyone had any recipes or ideas? I'd love to learn to cook and meet my calorie count.
(Note: PESCETARIAN options are super welcome here as I don't eat meat)

    Lots of nuts - trail mix would be perfect for you, raw nuts and dried fruit.

    Add oils to everything, very calorie-dense. Coconut oil in your coffee or tea, in smoothies. Buy some protein powder (there are vegetarian types). If you eat dairy, make protein shakes with full fat dairy or ice cream.
