OMG! Italian Tuna Salad w/ MultiGrain Tortilla Chips! YUMMO!

2 cans Light Tuna in Water, drained
1 Vine Tomato, diced very fine
3/4 small onion, diced very fine
1.5 TBsp Italian Seasoning
2 TBsp Olive Oil
4 TBsp capers, drained. and chopped small if large.

Combine EVERYTHING in a bowl and mix. Let sit for 30 min in the fridge. Serve witth 1 oz chips (usually about 11 chips)

Makes (4) .5 cup servings

Calories: 118.5
Fat: 7.5
Carbs: 2
Protein: 11
Sugar: .5
Sodium: 425

If Served with Chips (1 oz), adds about 140 calories, 3g of fat, 150mg of sodium, 19g of carbs, and 1g of sugars and 2g of protein.

Lessen the olive oil for less fat; serve over a greens Spring Mix for an essentiall guilt-free base. Lessen the capers for less sodium....but I think this is fabulous just the way it is!!!!

We had it on a picnic when we went wine tasting in Napa Valley over the summer.

This is also a GREAT party dish...its a hit and its healthy, healthy, healthy! I usually have 2 servings and its still less than 250 calories!

    Sounds super good! I can't have tomatoes and I dont like raw onion, so I'm gonna switch in red bell peppers. I never thought to use tuna as a dip before! Thanks!

    I dont like raw onions either, bu I chop them ever so small and I cant even tell!! But yes, as a dip, its soooo great! And over greens, its just as good! So much healthier than traditional tuna salad...and it tastes sooo much better!

    Mmmm, me too! They add such a kick! I just realized I could have rinsed them to reduce the sodium too....but like I said, its great just the way it is!

    Cant wait for lunch!!
