Tone my tummy & waist in 2013

I was cursed with the apple figure. In other words I have great legs (not an ounce of fat) but I have a muffin top & a bit of a belly.
I'm almost 50 which makes it harder to tone.

My food plan is to cut most grains (rice), and carbs (breads & pasta) and processed foods out of my life.

My exercise plan : Aggressive abs work out for 1 hour everyother night after work + my 1 hour cardio and strength training for one hour before work (I alternate the 2 workouts) + Saturdays I'm doing mountain Conditioning hikes that range from 2000 ft to 4000 ft elevation gain, working up to 40 lb pack (preparing to climb 2nd highest Mountain in Washington State).

Hoping this will work, but if anyone has had the same problem and managed to succeed, your input is highly appreciated
