Cook 'n Freeze meals?

Hi all!

What are your favorite meals to cook and then freeze into individual portions? I'm trying to look at convenience meals in a whole new light! The only thing I really don't like to freeze is soup (I don't like soup-- stew is fine).

    Ooh! Good one! I'm making lasagna with whole wheat noodles and turkey tonight to freeze!

    Chili
    Baked Ziti (Whole wheat noodles, 2% milk cheese, spinach mixed in)
    Eggplant cutlets
    Italian Stuffed shells (mix spinach in to cut down on the cheese)
    Mexican Stuffed shells (pinto beans, low fat cream cheese, salsa, and pepper jack sprinkled on top)
    Homemade veggie burgers
    Veggie Lentil Meatloaf
    Falafel
    Stuffed Peppers
    Veggie Stew
    Mexican Lasagna (black beans in lieu of meat; salsa with plain tomato sauce, 2% Mex cheese)

    That all sounds amazing! I love the Mexican lasagna idea-- and the stuffed shells!

    shredded bbq chicken
    stir fry
    enchilladas

    I don't like reheated pasta. But I will precook chicken breasts so they are slightly undercooked, slice into strips, and freeze in single serving portions. I can then thaw and cook quickly with pasta and veggies. If you freeze them slightly undercooked, they won't dry out during the reheating.

    I know I found the bbq chicken recipe on skinnyms.com. Might have found the cacciatore recipe there as well. There's a whole section of slowcooker recipes that are great. Skinnytaste.com has some good ones as well.
