    Yum...that sounds delicious. Not sure how easily I can find a delicata squash on short notice, but I think I can sub butternut squash. Making this tonight...Thanks!

    I just finished making butternut squash curry soup. It's one of my winter favorites...oh, but I don't use a recipe....butternut squash, acorn squash, carrots, onion, garlic, liquid ( I use chcken bouillion), salt, chipotle pepper, curry. It's cooking right now and it's yummy.

    Other than squashes and pumpkin, things that fare well in vegetarian curries (and are also rather filling) are eggplant, mushrooms (esp. dried) and chickpeas (garbanzo beans).
