DIABETIC AND A PICKY EATER - HELP?

I've had type one diabetes for about 6 years and I'm probably the pickiest eater you will EVER meet.
The list of things I DO eat is so much shorter than the list of what I DON'T.

What I DON'T eat:
vegetables
fruit
pasta
meat - except chicken
fish - only VERY rarely
milk - except in tea
cheese - only on pizza
sushi
egg
noodles
hamburgers
hot dogs

I don't CHOOSE the foods that I don't eat, i just PHYSICALLY cannot bring myself to eat them without holding my nose while eating them, without chasing it down with water, without vomiting immediately after. I really cannot do it. I've tried therapy and everything you could possibly think of - nothing has worked. I don't plan on changing the foods I eat because I know I can't do it.

I AM aware that the foods that I SHOULD eat are very high in vitamins that I need, yes, yes I've heard it all. I take vitamins and I'm actually dong well considering what I eat.

I'd just like some help or advice on things that I could try that are 'healthy' or 'low in fat'.. etc

Anyone?
