Mock fettucini Alfredo

1 1/2 cups cottage cheese
1/2 cup skim milk
2 garlic gloves
2 Tablespoons Flour ( I am using whole wheat)
1 Tablespoons Lemon Juice
1 tsp dried Basil
1/2 teas dry mustard
1/2 teas salt (optional)

Put Cottage Cheese, Milk and garlic in blender and mis. Add rest of ingredients and blend until smooth. Put in a sauce pan and heat until warm but do not boil. Serve over Whole Wheat Pasta. Serves 4

    Thanks much for the recipe. I threw it in sparkpeople and with 1 cup of pasta and 4 oz of grilled chicken and (I estimated) 1 cup of alfredo sauce, here is the nutritional values.

    Per serving:
    calories - 427.8
    fat - 4.1
    cholesterol - 72.5
    sodium - 459.4
    carbs - 46.4
    protein - 49.4

    falls into all my guidelines except high on the protein. I save this for one of my "boost" days. Thanks, Christine

    Check this out... I've tried it and its pretty darn good


    1 tub (250 g) PHILADELPHIA Cream Cheese Spread
    1 cup milk
    1 cup KRAFT 100% Parmesan Grated Cheese
    pinch of ground nutmeg
    salt and pepper
    Just follow our 3 simple steps

    Heat 1 tub (250g) Philadelphia Spreadable Cream Cheese with 1 cup each milk and Kraft Grated Parmesan in a nonstick pot. Bring to a boil. Season with a dash of ground nutmeg, and salt and pepper to taste.
    Pour over hot cooked pasta and top with additional Kraft Grated Parmesan.
    Serve with a side of steamed broccoli.

    Have you tried making this with light cream cheese and low fat or skim milk? Just wondering what it would do to the taste/consistency? Sounds so easy and yummy!

    That is actually what I do but this is just copied and pasted from the website. skim milk and light cream cheese is just A-ok
