Unsure how to eat

Sorry I did not know a proper title as that is really the Subject. I lose so much better with Low Carb. A few years back I easily dropped 40. Of course, like some, I have regained with the kids and a few surgeries and infections along the way helped me to creep it back on. Now as I do this path again I am trying to decide how to eat. I love fruit and veggies, and yes the occasional sweet treat. One of my favorite go to is a very low carb, wheat soft taco shell. I do a lot with it. While it is Low Carb, I tend to not lose or stall when I eat even the healthiest of carbs. A 1/4 cup of Brown Rice and I stall. My Dr says I am just over sensitive to Carbs and should do a Protein way of life with no cards of as few as possible.

I love Multigrain Cheerios and Bananas for fruit and snack. Not together and no milk. I can only eat so many eggs and cheese. Meat, on the other hand I can tear up. Except fish, tons of allergies there.

I am just trying to figure out how I should eat. Do I add in the health carbs, or wait? I am also very senstive to Sodium. Headaches and weigh gain like crazy but it is hard to avoid sodium. We do not salt any of our foods when we cook fresh.

If you follow the guidelines MFP provides for you, you will be successful. :)

ETA: I lost a good deal of weight many moons ago on Atkins/South Beach/Low Carb/etc., but I could only lose up to a certain point because I still ate too many calories. By counting calories, I've lost 30 pounds beyond my lowest low-carb loss, and have kept it off longer.
