Bananas Foster Pudding Cups


Servings: 8 (1/2 c. pudding mixture & ¼ c. banana mixture each)

Carb./serving=23 g


1 1-oz pkg vanilla-flavor sugar-free instant pudding mix

2 c. fat-free milk

½ t vanilla

1 c. frozen sugar-free whipped dessert topping, thawed

2 T reduced-fat margarine

3 T sugar-free caramel-flavor ice cream topping

2 large ripe banana, sliced

¼ t ground cinnamon

½ c. chopped pecans, toasted


In medium bowl whisk together pudding mix, milk & vanilla until slightly thickened. Fold in dessert topping. Divide pudding mixture evenly among 8 individual ramekins or custard cups. Cover & chill 1 to 2 hrs or until thoroughly chilled.


In large nonstick skillet over medium heat, combine margarine & caramel topping; heat until margarine melts & caramel just starts to bubble. Add bananas, cinnamon & pecans. Gently toss about 2 minutes or until well coated & tender. Remove from heat.


Spoon banana mixture over pudding mixture in ramekins. Serve immediately.
