For any one out there looking to up their veggie intake. I buy some asparagus, carrots, golden potatoes, squash and zuchinnie, chop all,(peel the carrots) drizzle a bit of evoo. season to taste, and roast in the oven. then I make single servings of them. A great way to get more veggies with hardly any calories and a bunch of nutrional value:smile:
