I am from NY but I am a country girl at heart. I tried this recipe and HAD to share it with you all. I made it for lunch with a piece of chicken breast on the side... Im typing so I dont go back for seconds :laugh:

3/4 red onion sliced
1c okra (fresh or frozen (if frozen thaw in a pan))
1c squash cut into bit size pieces
6 cherry tomatoes cut in half
1 tsp Olive oil
salt
pepper
TABASCO!!!!

Heat a skillet with non stick cooking spray (just a bit) and saute the onion for 1 min.
Add okra and squash and cook together for 2 min.
Add tomatoes, tabasco, salt, pepper, and tsp of olive oil and mix well.
Cover for 5-8 min and ENJOY

  • You rule! :happy: I've been hunting all over for tasty foods I can cook for my mom during her low iodine diet and this works. Just curious, what kind of squash did you use?

    I love green... but yellow works well too. It's fast, EZ, and healthy. Hope she enjoys
