Suggestions would be great...HELP

I don't have a problem with eating healthy foods. I love salad and baked potatoes and chicken. However, I like to eat this stuff with a lot of dressing (typically Ranch), butter, sour cream and I like my chicken fried. What can I do to keep from throwing my body into shock by just cutting all of them out all together? Are there any other things that would be good to add instead of these condiments that are better choices but at the same time tastes good?
