simple healthy meal for 4?

Hi guyyyyys! First time I have posted in this section, I am NOT an amazing chef at all!!
Scene Set;
four friends, gathering together on a sunday afternoon/evening to watch series of sci fi and crime type dramas from the past 10 years.
Currently on season 7, episode 8 of Dexter (OMG! how had I not watched this before??)
We take turns each week to cook and wash up, so far I have gotten away with omelette one week, then washing up every other week as I am awful at cooking.
I had a bit of a thought of doing pizza bread with salad, so getting some nice french type bread baguette thingys, tomato puree and loads of veg and lean meat bits to grill on top. Then load the salad with tomatoes and peppers and lovely things like that, possibly with a bit of balsamic vinegar on the top. Does that sound ok? Is there a lower calorie/carb thing I could do it on than baguette?
Also, it will come to be my turn again before I know it.... does anybody have any other ideas which are super simple to make/put together that even a muppet like me can make?

Do you have a slow cooker? If so, I'd recommend:

I think u are on to a good thing wih the baguete pizza and salad sounds lovely.
A wee tip dont use tomato puree staight out the tin or tub. Mix it with some water, mixed herbs, garlic and what ever oil u preffer.id use extra virgin rapesead oil
And maybe try low fat fetta or mozzarela.

There are lower calorie options. Any thinner bread would be less calories, but that sounds friggin' awesome to me.0 -
Thinking about it if ur up for it u could try making ur own wholewheat pizza dough. that would make it a bit healthier.0

1 lb lean ground chicken or turkey
Whatever seasonings you desire
Form into four patties and cook until internal temp is 165. Serve on whole wheat buns (healthy life has some that are only 80 calories)
One burger (patty and bun) made with 95% lean chicken is 240 calories
Add some roasted/steamed veggies as a side, and you've got a low calorie, very filling meal.
Some ideas for ways to season your burgers:
Ginger Thai burgers: add minced ginger, chopped garlic, lime zest, and cilantro. Top with sriracha sauce
Taco burgers: add taco seasoning to the burgers. Top with taco sauce and/or salsa
"Northwoods" burger: Hungarian paprika, black pepper, thyme, rosemary, chopped garlic, and chipotle powder
Pizza burger: oregano, chopped garlic, fennel, paprika, onion powder, pepper. Top with pizza sauce and. A slice of mozzarella cheese.0 -
awwww, nice ideas guys! thanks! i don't have a slow cooker, and i don't know if i feel confident enough to make my own pizza dough yet!! might be a trial for a few months time yeah, was thinking the puree may be a bit thick.... i tend to use herbs and spices rather than sauces to make stuff taste good - less cals, more taste

Slow cookers are great ideas.
Bread has a ton of calories but is great in thin slices and people like it.
Chili where you first do the meat (especially chunk meat, not burger) and drain the fat is good.
I've decided tortilla chips and salsa and popcorn with soy sauce (sounds weird, but my son's friends are currently eating it while playing dungeons and dragons as I type) have fewer calories than any other junk food.
My husband takes regular or low carb torillas, cuts them chip size and puts them under the broiler for even lower cal tortilla chips.
And don't forget the big tray of cut up veggies. Brocolli, carrots, peppers, cukes, etc. Any dip with sour cream has more calories than I want to think about. But put out salsa with it.0 -
Chili is always a crowd pleaser and you can cook it with beef, chicken, turkey, etc. I add beans and veggies to lower the calories per serving. You can make it mild or hot. You can have toppings such as cheese, sour cream, green onion, jalapenos, etc. Serve with cornbread or crackers.0

I love to saute food since it's so easy and you can make it easily in any quantity. I made a chicken stir-fry this week using 1.5lbs of chicken tenderloins, 3 diced bell peppers, 2 diced sweet onions, 8oz sliced baby bella mushrooms, 1 tbls olive oil, 2 cloves of garlic, and lots of herbs. It came out delicious and made 6 servings! Easy to pair with rice, pasta, or quinoa.
I heat up the olive oil, add the garlic for a couple of minutes, add the onions until getting soft, add the peppers until getting soft, and then add the mushrooms towards the end. For herbs I usually use dried basil, oregano, parsley, black pepper, crushed red pepper, and sometimes throw in some dill.0 -
