My salad needs to get a life!

I am going to broil oz of costco brand salmon for dinner and throw in on a bed of mix greens. Typically I will cut up 1/2 cup of english cucumbers and just have that with a homemade baslamic&evoo dressing.

I have already posted the salmon and the spring mix of lettuce on my food diary... I have 375-300 calories I am looking to fill for dinner. What low sodium non carbs (i.e. no crutons please) suggestions do people have?

    Just going to list stuff I like on my salads not sure if it fits into your low carb sodium but ideas at least :smile:

    Dried fruit, cranberries especially
    Almond slivers
    Pine nuts
    Apples
    Hummus
    Tomatoes
    Cucumbers
    Salsa
    Black Beans
    Parmesan cheese (fresh)
    Avocado, as mentioned
    Red, yellow, green peppers
    Edamame

    Thats all I can think of for now, good luck! And note, I don't put these all on at once HAHA

  • I love salads, even before I started my life journey. I like to put most of the things that were mentioned, plus

    -eggs
    -2 tbsp. bacon bits
    -banana rings (about 20 rings)
    -olives.

    low-fat cottage cheese is a good addition to a salad. I did not realize how much protein I was able to add to my diet this way

    hot sauce helps my salads taste really good without the dressings
  • See if you can find Seneca Onion crisps. They are basically dehydrated onions. SO GOOD! I put them on every salad now, in lieu of croutons.

    Feta cheese, avocado, boiled egg, dried cranberries, granny smith apple slices - those are my favorites on a salad!

    I LOVE vinegar or lemon juice on mine. I stopped eating salad dressing a loooong time ago because I want to taste everything else!
    Roman and lemon juice never seems to bore me!
