Salsa Recipes

One of my favorites. (Note I no longer work for Tupperware - that was a SHORT stint to get free tupperware haha but their chopper works well to get the desired consistency, rather than a blender which everything turns into soup on me)

1/2 cucumber, peeled and seeded
1 8 oz.-can of pineapple chunks, drained
1/3 red shallot (or red onion, I just like the mild shallot)
1 tbsp. Chipotle Seasoning Blend (Tupperware sells this, but I any can do)
1 tbsp. fresh lime juice
1/3 cup cilantro leaves, washed (I use cilantro paste as its not as strong, I dont care for cilantro taste)
1 mango, peeled, seeded and diced (I use frozen, not thawed)
salt and pepper to taste

Place all ingredients except the diced mango, in the Quick Chef. Turn handle to chop until you reach the desired consistency. Add diced mango and turn the handle a few more times to incorporate diced mango into the salsa. Season with salt and pepper to taste. Serve salsa at refrigerator or room temperature.
