Wil's Vegetable Casserole Recipe

Here is my vege casserole - enjoy!!
250g Potatoes, diced
250g Pumpkin, diced
200g Cauliflower, broken into florets
150g Squash or Broccoli, cut into quarters or florets
1T Rice Bran Oil
2 Onions, chopped
400g Tinned Tomatoes, crushed, low salt
1c Water (or Vegetable Stock)
150g Frozen Peas and Corn
1/3c (90g) Natural Yoghurt
1. Steam potato and pumpkin, for approx 6 minutes. Add Cauliflower and Squash/Broccoli after 2 minutes.
2. Heat oil in a large saucepan, add onion and cook, stirring, over medium heat until starting to brown. Stir in tomatoes and water/vege stock. Add the potato, pumpkin, cauliflower, and squash/broccoli and cook for 5 minutes. Add the peas and corn and cook for 2-3 minutes, or until the vegetables are just tender.
3. Add the yoghurt and stir to combine. Simmer until slightly thickened. Season and serve with lemon wedges.
Tip: add grated cheese if desired. Also add curry paste if a spicier flavour is desired.
This is my fallback recipe - very quick and convenient on days where I am pushed for time, and the girls really love it. Super healthy. I change the veges to whatever I am in the mood for, and it is very easy to get creative with it.

Just got all the ingredients out to make this... and realised I only have berry flavoured yoghurt......... dammit! I'll have to make this one at a later date.0
