Simple Baked Tofu
This is great in a salad or served with rice/cous cous/quinoa and a veggie.
Simple Baked Tofu

Ingredients
2 tbsp lite tamari sauce
1 tsp EVOO
1 garlic clove, minced
200g low fat tofu
Directions
1. Preheat oven to 400 degrees.
2. In a bowl, mix together the soy sauce, oil, and garlic. Cut pressed tofu into 3/4 inch cubes. Toss the cubes in the soy sauce marinade. Spread the tofu in the prepared baking dish in a single layer. Bake for 25-35 minutes, stirring once or twice, until brown and chewy.
