Clean condiments!

I'm looking for some condiment recipes! I love condiments (and put them on everything- I'm looking at you, hot sauce) but HATE how they are all processed. I'd rather have something I made myself from scratch to put on things.

So what are your favorite homemade condiments?

I'm a huge fan of mustard. I am not a clean eater, but I did find this recipe that might interest you:

    http://www.foodnetwork.com/recipes/emeril-lagasse/homemade-mustard-recipe/index.html

    Ingredients

    3 tablespoons yellow mustard seeds
2 1/2 tablespoons brown mustard seeds
    1/3 cup drinking-quality white wine
    1/3 cup white wine vinegar
1 shallot, minced (about 2 tablespoons)
    Pinch ground allspice
    3/4 teaspoon salt
    1/4 teaspoon white pepper

    Directions

In a non-reactive bowl, combine all ingredients and refrigerate overnight, covered.

Transfer the mustard mixture to a blender and process until mustard has obtained the desired texture and thickness; it is equally delicious whether you leave it chunky or smooth. Store in an airtight, non-reactive container in the refrigerator for up to 2 weeks.

I don't make condiments, but I have found that vinegars and mustards are like the best thing to use to flavor your foods without adding any calories.

I tried this... I seriously put Tapatio on everything!! I never could find anything that really satisfied me though. We even tried to make our own horseradish a couple of times. I ended up deciding that a tsp a day or week of hot sauce isn't going to kill me.
