clean eating confusion

I am starting the 30 day cardio challenge on Monday and it involves clean eating. When I first thought of clean eating I was thinking more primal/paleo type dieting. The more I read about it though I guess I was wrong. I'm reading that I can still have dairy and breads and such and I've found a few websites with recipes including flour and such. Though most of them call for pastry flour or coconut flour instead of all purpose white flour. I will be the first to admit I am basically a moron and need to be spoken to like a 3 year old so before Monday comes I just wanna make sure I have this right. From what I gather in my tiny little brain, I basically just need to really read labels? Make sure I know what all the ingredients actually are on a package of "whole grain bread" or whatever it is I'm buying. Stay away from processed junk? Get as much fresh fruit and veggies as I can? Am I right?
