Anyone have any GOOD spaghetti recipes??? My Mom used to put tomato paste in hers but I can't find her recipe :(

    i dont really have a recipes But a good healthy option is instead of using pasta buy spaghetti squash really easy to make and takes pretty good.

    This. I also use ragu light Alfredo sauce and 6 oz shrimp for lunch sometimes. Its under 400 cals for a heaping bowl of it

    I made spaghetti squash with a sausage sauce last night.. It was super good.

    The day before I made the sauce.
    1 lb ground sausage
    3 cloves garlic, sliced
    1 huge (28 oz) crushed tomatoes
    1/2 tbs balsamic vinegar
    salt
    pepper
    dried oregano
    dried basil

    Brown the sausage. Add the garlic and cook until you can smell the garlic. Drain the fat. Dump in the can of tomatoes. Add the rest of the ingredients. Allow to cook at low until the sauce thickens slightly. Put in a heat proof container then store in the fridge until the next night.

    The night you want to eat, boil the spaghetti squash for 30 minutes. When the squash has 10 more minutes, reheat the sauce on the stove (the microwave works too). Fork the squash and serve with the sauce. Add grated parmesan to taste.

    I had this for dinner last night. My whole family loved it. We had broccoli too. YUMMY

    this sounds great!.....for those that dont eat pork..you could use ground turkey or ground chicken too!
  • Another quick and protein-rich one from me - Tomato Tuna sauce (should serve 4):

    2 small cans of tuna in oil (or fresh tuna if you like)
    1 small pack (500g/17oz.) of tomato passata (Italian "Polpa" - unspiced tomato sauce; don't know how this is called in the US)
    a few fresh cherry tomatoes or tomato paste (to improve the taste of the passata)
    2-4 cloves of garlic
    Italian style herb mix (if you can't find it, get some dried oregano, rosemary and basil)
    salt
    pepper

    1) Put the passata in a pot, heat it up (don't bring to boil)
    2) Pour away the oil from the tuna, add the tuna to the passata; If you like, add the cherry tomatoes
    3) Finely chop the garlic and add it (or use a garlic press)
    4) Bring to boil, then reduce heat and let it simmer at lower heat for some time
    5) Season with Italian style herbs, salt, pepper (or tomato paste) as you like

    Of course you can adapt the recipe as you like, e.g. by adding olives or adding finely chopped carrots.
