    You guys are correct- I'm sure nothing will taste as good as the real thing. I'm afraid I'll splurge. Portion control isn't one of my strong suits, so if I can make modifications to make it a little better for me I like to do that!

    Get a mayo made with olive oil.. or whip up your own (or an aioli) instead. Healthy fats... just don't eat a lb of egg salad in a sitting.. and account for it in your diary/caloric goals
    This. 1tsp per egg is enough and that's about 30 calories, and you get to eat the food the way you enjoy it..... you don't mess with comfort food, ever. lol
  • My advice is to use a little mayo, just try not to use too much, use some mustard as well. When I make egg or chicken salad I use a very small amount of each, it's not as creamy or thick (a dryer version if you will) but tastes good and I can feel better about eating it!
