Spanish omlette

1 egg
2 egg whites
2 med potatoes sliced
half a tin of tuna
half a bell pepper
half an onion

Boil the potatoes and fry off the onion and pepper (in low cal spray veg oil) until soft, allow to cool. Whisk the eggs and then mix all the ingredients together.Cook in frying pan and serve with side salad.
Yummy and very filling, you can replace tuna with ham and low fat cheese or just experiment with your own ideas.I have lot's of different variations but this is the lowest calorie.
