    I love to bake it in the oven at 350 for around an hour. Then adding some Ghee!

    Sweet potato fries, cut season with salt and pepper (or however you like) and some olive oil. Bake 350 until crispy.

    How do you get them crispy, with olive oil?

    Well I haven't actually tried these yet so I can't say if they are good yet but I was looking through a list of low calorie lunches that I saved a while back today and I saw these two sweet potato recipes that look good to try so are going on my list for my next shopping trip:
    Stuffed Sweet Potato: 365 calories
    Why it rules: Greek yogurt is a great swap for sour cream on this potato.
    1 cooked sweet potato, sliced: 100 calories
    3 slices cooked turkey bacon, crumbled: 130 calories
    1/4 cup Greek yogurt: 30 calories
    1/2 scallion, chopped: 5 calories
    Side Snack: 5 Kashi 7-grain crackers with 1 stick reduced-fat string cheese (100 calories)

    Sweet Potato And ****ake Mushroom Salad: 370 calories
    Why it rules: Sweet potatoes are filled with fiber and vitamins!
    1 cup spinach: 5 calories
    1 cooked sweet potato, sliced: 100 calories
    4 ****ake mushrooms, sliced: 40 calories
    1/4 cup feta cheese: 100 calories
    2 slices tomato: 10 calories
    1 tablespoon olive oil: 110 calories
    1 tablespoon Dijon mustard: 5 calories
    1 squeeze lemon juice: < 1 calorie
    Side Snack: 1 cup halved strawberries and ½ a banana, sliced (100 calories)

    Sliced very thin - I use a vegetable peeler and just shave slices off - place in a single layer on a paper plate or microwavable dish and microwave until brown and crispy. spinkle with seasonings. I like just a bit of kosher salt, but cinnamon/sugar or spicy spices work well too. Pampered chef makes an awesome set of silicone mats that go in the microwave, just for making chips like this. I'll make less than half a potato to go with a sandwich or a bowl of soup. I've even been known to make a batch to nibble for a sports event. Better than my favorite kettle chips!

    Just made this last night and it was delish!

    I microwave-steamed half a yam for 4 minutes(little too soft, 3 next time!), then sliced into the flesh like you would when you cube avocados, opened it up and sprayed Pam over top and sprinkled some salt and pepper. Then I put it under the broiler for about 5 minutes before sprinkling on some grated parmesan and broiling another few minutes until it's nice a toasty looking!

    My favorite:

    Cut up sweet potatoes and butternut squash in smallish pieces.

    In a bowl, combine olive oil, salt ( I use Herbamare sea salt with organic herbs and veggies) & pepper, garlic powder, cumin, ginger, coriander, and thyme+sage or herbes de Provence.

    Add the sweet potato and squash pieces and coat them with the mixture by tossing well, then place them in a single layer on a baking sheet.

    Preheat oven to 375, then bake for about 40 mn or until tender.

    YUM!
  • Slight twist on a Jamie Oliver recipe (seen on his 30 minute meals)

    Pierce a few sweet potatoes and put them in a microwavable bowl. Cut a lemon in half and add to the bowl also (both halves). Cover the bowl in clingfilm, pierce a few times and microwave until ready (use own judgement - depends on how many sweet potatoes are used).

    After they are ready, place them on a chopping board and mash them up with the skins on. Drizzle with a little olive oil, add some chopped coriander (cilantro?) and seasoning and then crumble some feta cheese over them. Mix together and voila! Lovely as a side dish or on it's own.

    Jamie used normal baking potatoes as well in this recipe but I make it healthier by just using the sweet potatoes. Otherwise it's the same recipe!

    Pulled Pork Stuffed Sweet Potato

    Yield: Serves 8
    Ingredients:

    2 lb pork loin
    1/4 cup chili powder
    2 tablespoons garlic salt
    6 cups coke a cola, or enough to cover pork
    3/4 to 1 cup Sweet Baby Ray's Original BBQ Sauce
    8 large sweet potatoes
    Directions:

    Season entire pork loin with garlic salt and chili powder. Pour a little coke in the bottom of the crock pot and add the pork butt. Add enough coke to just cover the pork loin. Cook on low for 8 hours.

    While pork is cooking, bake your sweet potatoes:

    Preheat oven to 400°. Scrub potatoes under water and wrap in foil. Bake in oven for about 1 hour. Sweet Potatoes are fully cooked when you can gently squeeze them and they feel soft. Remove from oven and set aside.

    Remove pork from crock pot and discard almost all of coke mixture...leaving just a tablespoon or two of juice behind to help moisten the pork.

    Place the pork back into the crockpot and then use two large forks to shred the meat. Add BBQ sauce and combine (above it says 3/4 to 1 cup BBQ sauce, which just means add as much, or as little, as you like). Leave slow cooker on low, or warm, to keep things hot until you are ready to serve.

    When ready to serve, cut a a slit in the sweet potato, lengthwise. Grab the potato from both ends and press together to open the sweet potato up. Fill each sweet potato with a generous helping of pulled pork and top with an extra drizzle of BBQ Sauce. Serve immediately!
