I made this on a whim this morning...and it was so good I had to share :)

1 whole wheat English muffin (cut in half)
1 egg white
1/4 cup skim milk
1 tsp vanilla extract
2 packets of Splenda
Sprinkles of cinnamon

Combine the egg white, skim milk, vanilla and Splenda in a medium bowl
Soak both halves of the English muffin in the mixture
Cook in a nonstick frying pan over medium heat
When the egg mixture looks "cooked" on the muffin, remove from heat
Sprinkle cinnamon on top and enjoy!

Voila! Perfect with Sugar-Free Syrup! I ate mine with a side of raspberries! Yummy

  • Mmmh, sounds great. Is it a full muffin or a half for that amount of calories?

I wonder how it would taste with a Arnold's Sandwich Thin instead of English Muffin.
