I made this this morning and it was FABULOUS! So thought I would share. I cut the recipe in to 8 servings which if I calculated correctly brought it to 377 calories for a little more than a cup of hearty yumminess! I was going to add the dollop of vanilla greek yogurt for a few additional calories and protein...but was so caught up in the smell and trying it...I completely forgot! LOL

Steelcut Oats in the slow cooker are great. If you have a small cooker, you can follow this:

1/2 cup of Steelcut Oats and 2 cups water (you can add banana/nuts etc...but I add those in am).
Put in (low) and let cook overnight.
IN the am, you have a creamy pot of healthy goodness :)

Make as much or little as you like:

1/4 cup of steelcut oats, to 1 cup of water.
Cook for 8 hours (more or less based on crunchy or creamy texture desired).

To the OP - do you think this recipe would reheat well? I'm anxious to try this but wondering how it would be the second time around (there's only 2 of us at home!). Maybe if I add the bananas in later... hmmm.
