Tuna and bean Salad
1 can of tuna
1 can of beans (broad, haricot, black eyed peas, kidney beans or any you really like)
2 celery sticks, chopped
1 red onion, shredded (sliced realy finely)
2" cucumber cut into cubes
Juice of half a lemon
1 tbs rapeseed oil (you can use Olive Oil but Rapeseed is lower in fat, just as good and still very tasty)
Salt and Black pepper
Throw the lot in a sealable tupperwear box and shake! quickest tastiest lunch box I've ever had!
You could customise this with lettuce leaves etc if you wanted.
