Vegetarian Taco Filling
I have to give credit for the original recipe to one of my exes. She made the dish for me one night, and it inspired me to tailor a little bit to my kitchen.
Ingredients:
1 cup TVP
1 cup water
1 cup cooked brown rice
1 vegetable bullion cube (can sub out water and bullion for low sodium V8)
1 whole tomato, chopped
0.5 oz taco seasoning
1 tsp chili powder
1/2 onion, finely chopped
2 cloves garlic, minced
1tbsp grapeseed oil/olive oil
1) Cook brown rice according to instructions and set aside. It doesn't have to be fresh - this is a great way to get rid of leftover rice.
2) Boil water and add bullion cube. Stir until dissolved.
3) Mix TVP with taco seasoning and chili powder.
4) Combine tvp with bullion water and tomato. Allow it to sit for about 10 minutes. In the meantime...
5) Heat oil in medium skillet over medium heat
6) Add onions and garlic to oil and cook until soft.
7) Add tvp mixture and brown rice, cook until well heated. Stir frequently to avoid burning.
Voila! Simple, very fast to throw together, and decently healthy. Makes enough for approximately 8 tacos. Add whatever toppings you'd like in whatever sort of shell.

Textured Vegetable Protein. Most larger grocery stores carry it - usually in the vegetarian or organic section. Sometimes it can be found in bulk as well. It looks kind of like grapenuts.0
