Dinner ideas for mommy & toddler?

My 3 year old son and I eat dinner together every night. He's a terribly picky eater, but I am usually able to make him something he will eat. For me, since I don't want to cook a second meal, I keep what I eat small and easy, but I am getting really bored with grilled chicken, or soup, or Smart Ones.
I am wondering if anyone has any low-fuss (and ideally under 500 cal) dinner ideas they'd like to share?
I eat anything (kinda the problem) & my son eats a limited selection of toddler food but I always do serve him veggies, and try to squeeze something new on his plate.

I don't have any suggestions for you, as I have a picky eater too. I'll be looking for responses though.0

I've been fairly lucky as my 2yr old son eats fairly well. One thing he does like is fish. We use panko bread crumbs and bake so it gets a little crunchy. Tell him they are fish sticks... Unfortunately we do A LOT of chicken! But we all love it! I am hoping other people have some good ideas, I can always use more! GOOD LUCK!!!0

My daughter (15 months) loves salmon. I'll cook it and then give her bits and throw a serving on a bed of spinach for myself. I make a lemon Dijon vinaigrette to put over it so I don't contend with preservatives in store bought dressings.
I'm interested in what others do too0 -
My son loves salmon and brown rice. I just haven't found any good at a reasonable price. The salmon I've been getting lately is fatty.0

I also have a 3 year old at home, so I may be able to help after I think for a while. When you say picky, how picky do you mean? Like, he won't eat any (fill in the blank) kind of stuff.0
