Brown Sugar Meatloaf--vegetarian version

To make it vegetarian, I did the following substitutions:
-instead of meat, I used 1 cup cooked lentils (simmer in 2 C boiling water till water absorbed) mixed with 1 cup oats [you may need to adjust the amount because this is less than the "meat" amount in the recipe
-I used rice milk instead of regular (because that's what I have) although I think if you use the same amount of lentil I did, you do NOT need 3/4 cup. Definitely seemed a bit soupy when it went in the oven (still in there now), so I'm not sure how the consistency will be. I would say about 1/3 cup would be sufficient to 1 cup of lentils.
-I did NOT use the saltines because of the use of oats. I think that would be a preference thing.
-I also didn't use ginger, because I didn't have any.
It's an easy recipe to mess around with and make your own versions. With the changes I made, the cal content for a serving size (1/8 loaf) went down from 353 to approximately 171.5 (it would vary depending on what types of things you use).

It turned out pretty well. It still only needed the hour at 350, like the recipe called for. I would say only use about 1/3 cup milk but add slowly and see how much you still need. I had thrown in a couple breadcrumbs to soak up the extra liquid which seemed to work well. It's definitely lighter than regular meatloaf and sits better in your stomach!
I'd say also add a few more spices to your liking to bring out the flavor more.
I will eventually post my normal lentil loaf recipe too, because I do like that a little better!0
