Indonesian Style Beef Rendang Curry

I found this recipe in the recent magazine "Cooking Light"
MADE IT TODAY AND IT IS DELICIOUS!!!
Shallots (halk cup)
1/3 cup sliced/grounded ginger
1.5tb garlic mince
2tb Chilli garlic sauce (I used the one at most chinese stores)
1.5 tsp turmeric
1tb red curry paste
1 1/4 tsp salt (taste before adding)
1/4 tsp ground cinnamon
1 (14oz) light coconut milk
2/3 cup ground coconut unsweetened
1tsp lemon
2tsp sugar
1-2lbs beef chuck (stew style) boneless
1 (14oz) chicken broth container
(a) Add 1st nine ingredients and ground in pestle and mortar or chopper.
Add 1/4 cup coconut milk to mixture and set aside.
b) Separately, add 2/3 cup ground coconut to 3tb coconut milk and set aside.
Heat a pot or pan, add mixture (a) to pan and heat, then add the coconut milk (remaining) and add next 5 ingredients plus broth and boil mixture. At this point, the meat should be added in there. Also, add 1tb of the rec curry paste.
Leave on med-low heat and simmer for 1.5 hours
Stir in the coconut mixture from part (b).
Cook until beef is tender.
I served it with brown rice and steamed broccoli.
It was amazing!
Total calories are 449 calories (1/2 cup beef curry and 3/4 cup rice)
