Mini meatless tostadas

This is great for a filling, high fiber lunch when you're craving something that tastes a little naughty.
Bottoms:
Kettle Brand Organic Black Bean Tortilla Chips - 1 oz... or 11 chips
Part Skim Mozzarella cheese, sliced thin and cut into 1 inch squares (make one for each chip!)
Topping:
1/2 cup organic black beans (from a can) only half-drained
4 cherry tomatoes or 1/2 regular tomato diced small
1 or 2 vegan boca burgers (depending on how hungry you are!)
Seasoning to taste (I used garlic powder, onion powder and chili powder)
Put the chips on a baking sheet and place the cheese squares in the centers of the chips. Put in oven on broil for 2-3 mins - just long enough for the cheese to soften and the chips will brown slightly (and smell very delicious). Pre-cook your boca burgers, then chop or crumble them into small pieces. In a bowl, combine burgers, black beans, tomatoes and seasoning and heat in microwave until hot (1-2 mins). Stir really well.
When your chips and topping are done, generously lump the topping onto the chips by heaping spoonfuls! This is a large and very filling meal and you can change up the seasonings and add more vegetables if desired. This is great after a workout!
With 2 boca burgers:
