Avocado ideas, anyone?

Anyone have any ideas on how to encorporate avocado into anything? I have three ripes ones I need to use either in a dinner or a snack, but I don't want to eat it plain.

Any ideas or receipes would be appreciated!

    My favorite ways are sliced on a turkey sandwich (in place of any other condiment) or diced up with some quinoa, tomato, black beans and cilantro dressing. I would also suggest going to the recipe forum and searching avocado. Tons of ideas there!
  • you can mash up half with lemon juice and a little salt and put it on plain rice cakes or on multigrain bread. sounds weird, but really yummy!
  • Cut into chunks and serve with diced roma tomatoes, diced onions and some cilantro. Can add lime, a little seasoned salt and pepper. Great on turkey burgers.

    I stuff my avocado with pico de gallo - or just eat it with a little salt and a spoon. My husband spreads it on an english muffin instead of butter.

    I have chicken and avocado, or chicken and mackeral, salad, pretty much every day for lunch.

    avacado, salsa, leomon juice, makes a great dip. or i mix it with crab in a wrap, yummy

    I was going to suggest a guacamole too! I also cut them up and eat them with eggs, spinach and tomatos or on salads.

    crack an egg into a half and bake it, use it as the mayo in a tuna sandwich, spinach strawberry and avacado salad with raspberry vinagrette, throw it in a smoothie, on ANY sandwich, throw in it an omlette...a fav of mine grilled cheese sandwich with spinach and avacado.

    avacados go really well with strawberries

    you can even use it to make brownies and other desserts.

    My favorite...just a bit of salt and scoop it out with a spoon and eat.

    Second favorite would be guacamole dip...otherwise:

    Put on sandwhich

    Put on salad

    Put it inside a tortilla with beans

    Side or garnish for just about any mexican dish out there

    garnish for tortilla soup and posole

    Living in New Mexico, the avacado is pretty much a staple food.

    Half, take out the seed. Use knife to score into cubes but leave in the skin. Drizzle with olive oil, balsamic vinegar and minced garlic. Let sit a few minutes for flavor to mesh and dig in.

    Also, us for egg salad in place of mayo. My boyfriend LOVES this and devours it.

    Blend them in a food processor with a tablespoon of almond butter (for each avocado used), a teaspoon of cinnamon, and then toss in cocoa powder and honey to taste. Makes a DELICIOUS pudding.
