Veggies for Breakfast

Hi everyone, I'm looking to incorporate more veggies in to my day and I want to start with breakfast. I like to put in peppers, mushrooms and spinach in to a small omelette and recently I made a sweet potato, pepper and kale "hash". What's are your favourite ways to add veggies in to breakfast or brunch??

    I LOVE spinach!! Seriously...spinach and cheese omelets or a green smoothie are one of my fave ways to start the day. Yumms. I love that bright green color of the smoothie myself...and the fact that I don't taste the spinach in it rocks. Not that I don't like spinach, but I don't want to taste it in a drink :)

    I am also always looking for more ways to add veggies to breakfast. I like to make corn tortilla tacos for breakfast with refried beans or sweet potato (or both), shredded cabbage, and salsa. I also eat leftovers-I've never understood why we eat different food for breakfast than for other meals. You can also make quiches (doubly easy if you skip the crust) in muffin tins and add in broccoli, onions, peppers, tomatoes or anything else you like. And I know mushrooms aren't technically a veggie, but I love them sauteed on toast.
