Homemade Chicken Noodle Soup (under 200kcals)

This is a lovely lunch/dinner which is so filling and each bowl is under 200 calories!

You will need:

2 handfuls of leftover shredded chicken (good to use up the remains of a roast)!
1 red chilli chopped
3 spring onions chopped
500ml chicken stock
200ml boiling water
1 big handful of sweetcorn
Piece of ginger sliced about the size of your thumb
Sesame oil
1 large handful of Noodles (any type but I love singapore rice noodles best)
1 clove of garlic chopped
Soy Sauce


1. Add a slug of sesame oil to a pan & heat. Put in garlic and leave to sizzle.
2. Add spring onions and stir until soft.
3. Add chicken and coat in oil.
4. Add chicken stock, water, ginger and chilli and bring to the boil. Add a bit of soy sauce if you like it.
5. Add sweetcorn & noodles & leave for about 1-2 minutes.
6. SERVE and ENJOY!

Easy peasy.

  • thanks for the recipe...I have a question...do you measure the noodles dry or wet? For example, when I go in the database, it says that rice noodles are about 100 calories/ounce....would that be cooked noodles?
