Clean Eating Smothered Mushrooms
2 servings

Ingredients
2 Large Portobello mushrooms, stems and gills removed
1/2 cup low-sodium salsa
2 tbsp green onions, chopped
1/2 cup low-fat mozzarella cheese
2 tbsp sesame seeds

Directions
Preheat oven to 400 degrees. Place mushrooms, upside down on a baking tray and top each with salsa, green onions and cheese. Sprinkle with sesame seeds and bake 10 to12 minutes.

  • Hmmm. Whenever I think of mushrooms I think of a creamy sauce. But this sounds really good. Must try.

    mmm that sounds really good! I looooove stuffed mushrooms. I make mine with hot italian turkey sausage & low fat cheddar. A few months ago though I made some with asiago, parmesian & fresh thyme, they were delicious!

    I made one of these last night and loved it!

    I baked mine for 20 minutes, then added the cheese and put it under the broiler to brown a bit. Added some tobasco (my current obsession....) and it was a great dish. Can't wait to try it again. Thanks for the idea!
