Has one made any as I"m looking for the best, healthiest way to do it..the only think i could come up with (since i no longer use the deep fryer) is to rub some OO on the potato chunks and just roast them?

I just use the non stick spray in a non stick fry pan. You can use a tiny bit of healthy oil too if you want, such as canola or olive oil0

here's how we do them at work (breakfast place) Boil potatoes al dente, let cool and then shred/grate. Add a small amound of evoo and add shredded potato, season as desired and coo, to desired doneness/crunchness lol. Now we do this on a flat top grill, but can easily be done on griddle or saute pan.0
