Picnic Ideas

Hi all,

My boyfriend and I are going away to the Lake District (UK) for the weekend. We're going to be walking for Saturday and Sunday and taking picnics with us in an attempt to save some money and stick to the diet!

I was wondering if anyone had any interesting suggestions on picnic food? I'll be able to use the kitchen to prepare things, but obviously don't want to spend lots of time doing this!

Any intersting sandwich ideas? or sandwich substitutes?!
What about other snacks?

    a frittata (like a quiche with out the pastry and filled up with sliced veg)

    make wraps instead of sandwiches = more filling less carb

    rice balls (use brown rice and mashed lentils)

    fruit salad

    If you want something hot n easy I always take pot noodles and a flask of hot water to make them with.

    Just chicken breast and salad with fresh stuff....

    All that walking will be good for your cals too so dont worry too much, enjoy!

    for snacks i take this with me to social events so that i can have snacks and drinks with everyone but know what i am eating - would translate to picnic well

    pita bread chips

    cut a pita bread into thin wedges - spray with olive oil and bake until golden and crunchy

    eat with salsa and its yummo and most tomato based salsa is really low in cal even some of the store brought ones.

    i make a home made salsa - bit higher in cals but healthy
    cut up 3 tomatos, 1 avocado and a can or corn(drained), mix with a little olive oil, salt, peper and any fresh herbs you have.

    You can make some apple crisps this week to take with you...
    Slice apples thinkly, toss with some cinnamon and bake at 250 for 2 hours.

    You can make a nice chicken salad (see my blog for a yummy low cal chicken salad with apples and grapes, and low fat yogurt) and take pita bread with you - stuff the pita pockets when you're ready to eat.
