MEAL PREP - Lunch - Egg Muffins (230cals)

One of my pals here (Liz827) asked me the recipe for my homemade egg muffins, so here it is!
I prep these on sundays for my lunch at work for the whole week, it's quick and easy!
The cheese makes it taste decadent!
Every egg muffin has 230 calories, 8g of fat, 31g of protein and 9g of carbs (Vit.A-57%, Vit.C-34%, Cal.-33%, Iron-20%). Awesome, no?
Servings: 5
Ingredients:
- 5 whole eggs
- 500ml/500g egg whites
- Pepper to taste
- 171g of fresh spinach (separated in 2)
- 2 chopped green onions (separated in 2)
- 180-200g of Allegro 7% cheese (Low-fat, High-protein cheese) (separated in 2)
- 1 cup of milk
- You need a 12-muffin pan (regular size) and a 6-muffin pan (large size).
- Mix whole eggs with egg whites (add pepper to taste).
- Fill 10 regular muffin cases half-way (I recommand spraying Pam before).
- Cook at 350 for about 5-10 minutes (I didn't time, just check them until they are cooked, when it's no longer liquid).
- Take these 10 egg patties out.
- Shred spinach and green onions.
- Put one egg patty at the bottom of 5 large muffin cases.
- Top it with half of your spinach/green onions mix.
- Then top that with half of your shredded cheese.
- Put another egg patty on top of that, and fill the spaces with the remaining egg mix.
- Put in oven at 350 and cook until there's no more liquid.
- In a wok, put the other half of the spinach/green onions mix and add milk with the rest of the cheese, and cook until cheese has melted and milk has reduced a bit.
- Then you top your quiches with that mix!
- Serve hot, and enjoy!
