Am I doing this right so far?

I've been doing some research along with other readings before I started this diet, and even chatted with my doctor. This is day 2 on MFP and day 2 on this diet, and I want to know so far today, does this seem alright? I like to do this breakfast/lunch combo quite often since I feel satisfied, full, and energized. Thanks!

Breakfast

Folger's 100% Columbian - 8 oz. Coffee, 8 oz
Great Day Farmers Market - Large Egg Grade A, One Dozen - 3 eggs
Nature's Own - 100% Whole Wheat Bread - 2 slices

Snack

Landofrost Premium - Black Forest Ham, 4 slices

Lunch

Quaker's - Brown Sugar and Maple Syrup Oatmeal, 1 package
Granny Smith Apple with 1 tsp of peanut butter

    As long as it fits into your daily goals, it seems fine to me. However, if you want to cut out some calories you could always try egg whites with one whole gg in the morning (that's what I do), so you still get protein but not as much fat and I am a big proponent of regular oatmeal that I can mix in and control the sugar content. The only bit of advice I will offer is to use a measuring spoon to know exactly how much PB you are getting. I love PB and was shocked as what a 'serving' of PB actually looks like compared to what I use to eat.
