how to eat healthy with a hectic life

I have a pretty hectic life, like i know a lot of people do, so it's so hard to be motivated to come home and cook healthy when I get off work sometimes pretty late. I've been going back and forth on this weight-loss roller coaster for years and I'm just coming to the point of frustration and I know now is the time to really commit to this fully. How do you keep motivated with all the surrounding hurdles?

prep your meals on the weekends and use your crockpot on the weekdays so you don't have to come home and cook.0

Yes, I have no time myself. i have started making a little time on Sundays to prepare meals and snacks for the week ahead and it is working out great. In the end I find it saves me time.0

I do what everyone else has said so far. I make some extra time on sundays to prepare preportioned snacks and meals I might need quickly. Sometimes lunches for my husband and I or sometimes dinner depending on the schedule. Most of the challenge is just realizing you need a little planning. I learned to cook when i was really young so I make most of our meals at home. The key to throwing together quick and healthy meals during the week is to make sure you have a decently stocked pantry and lean healthy meats/poultry/fish. I tend to by my chicken, pork and fish at costco once every few months then package it down in to two person serving sizes and in to the freezer. When I get home, I just take one out and put it in a sink of water and it is usually thawed out by the time i've taken the dogs outside and changed out of my work cloths Some people find it easier to plan out meals for the next week and shop for those meals. I usually cook one or two large meals on sunday and pack them up. Then I use those as dinner for the rest of the week. It works out well. I also have snacks all over the place at work - apples, almonds, kashi TLC bars (awesome!). I pack my own lunches (actually i keep a loaf of whole grain bread, some cheese, some lunchmeat, and mustard/vegenaise in the fridge there). Breakfast is usually cereal with a banana, or whole grain bread with pb or an egg... basic simple foods.0

One of my favourite meals at the moment is simply roasted veggies. It's not quick, as they take nearly an hour to roast, but the preparation is really minimal. I chop up peppers, onion, eggplant, zucchini, mushrooms and whatever else takes my fancy, toss it with a bit of oil, add any desired seasoning, and throw in the oven for 50-60 minutes on a low heat. I'm vegetarian, but I assume you could add a meat of your preference to this or cook separately with a quick and easy recipe (ie: when I used to eat chicken, I liked to marinate a breast in balsamic vinegar, oil, garlic, and ginger then fry on low heat in the marinade with a total prep/cooking time of about 30 min).0
