I usually do simple things that I might do several of on Sunday.

I will cook one cup of white and one cup of brown rice in heated water with a boulion cube. This usually lasts a couple of weeks and it's easy to scoop out a cup when I want it and heat it up with the rest of the meal.

Other things I will do is in the morning I will take chicken breasts and put in a zip loc container with a salad dressing marinade like italian dressing or teriyaki. I will let it sit until late afternoon before throwing on the grill and either having some with rice at dinner or put it in the fridge for later in the week.

I will do the same thing for pork tenderloin by marinating and then grilling until done.

By doing several things on the weekend that leaves the week open to quick fixes with leftovers and easy eating.

If this is still too much work for you then you could always fork over the money and pay weight watchers or Jenny Craig to send you your meals and then you really don't have to do any tedious preparation.

    Hope this helps.:flowerforyou:

www.cookinglight.com has some very easy and good for you recipes. You can also sign up to have one emailed to you daily. I have done that and now just make a quick stop at the store on my way home from work and don't have to think to much about what to fix. I am finding that I am enjoying cooking much more now that I am trying new things.
