Had the leftovers of this last night. Soooo good. Don't know if you're working with any particular ingredients or not. I usually hate pork, but loved this.

I'm a Thai curry fanatic. You can make it with chicken, pork or shrimp. The staples are rice (brown if you're good), light coconut milk, and curry paste (green is mildest). Prep everything first and make the rice. Get your pan really hot, cook the meat, add chopped vegetables ( sweet onions or scallions, peppers, mushrooms are my regulars) and cook until tender, however tender you like them. Add coconut milk...1/2 to a full can depending on how much protein and veg you have...you want a thin sauce but not soup. Stir in a Tbsp of curry paste, then taste and add more as you want. Add water chestnuts and frozen peas at the end just to warm them up. Healthy and delicious, easy and quick to make, and makes for great leftovers.
  • Not much online? Really? That's the only place I get my recipes!! My favorite site for recipes is www.kraftfoods.com. They are regular recipes, not specifically low-fat, etc. But just search for them - they're there!

Google your favorite brands, nearly all of them have web sites and most of them offer recipes.

Here's one of my family's favorite recipes. I found it when doing WW, so I don't have the nutriionals but they would be easy to figure out.

    Cola Chicken

    Makes 4 servings

    Ingredients:

    4 skinless boneless chicken breasts
    1 cup ketchup
    12 oz can diet cola

Put chicken in non-stick skillet. Pour catsup and diet cola over the top. Bring to boil.
Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to
cook until the sauce becomes thick and adheres to the chicken. It turns into the most
incredible BBQ sauce and it's only 4 points per serving. Yummm!

    POINTS: 4

I use recipes off of vegweb.com at least twice a week - yes its a vegitarian/vegan web site - but it can be alot cheaper to eat vegitarian meals - and you can play with the recipes and add/remove things as you need to.

The other site that I have been relying on - though its harder to sort through the recipes - is thatsfit.ca. They have a holistic nutritionist that puts up good recipes - The Warm Spinach and Quinoa Salad is one of my all time favorite meals! Thats what I had last night for dinner and thats what I am having for lunch today as well!

Do different types of google searches "clean recipes" tends to get me some good ones. Or even "cheap healthy meal ideas" might get you something.
