DIABETIC RECIPIES???

Any good recipies for those that are diabetic??? (type 2)

    Hey! I don't have these saved into my recipes so you will have to enter them your self for calorie counts. I am type 1 and sometimes i struggle with the low cal and low carb. I am also a night shifter and do most of my cooking in the crock pot! though I am sure you could do them on the stove top or oven

    Firecracker Chicken

    1lb boneless chicken breast
    1 jar salsa (as hot or mild as you like)
    taco seasoning is optional.

    I sprinkle the taco seasoning on the chicken breast put them in the crock pot and dump the jar of salsa on it. i turn it on low and let it cook while I am sleeping... about 6-8 hours. I shred the chicken and put them in low carb wraps with lettuce. sour cream and cheese or whatever would would put in a taco! very tasty!!

    Crock Pot Sausage

    1lb Turkey smoked sausage (you could use regular if you wanted)
    canned green beans (i use 5 or 6 keeps the calorie count lower and i can eat more! lol plus a great dinner to take in my lunch)
    8 small red potatoes. washed. you can peel them if you like but i don't. you can also use regular white potatoes and slice them or dice them if you wish. it is just easier for me to count 2 small red potatoes than to guess how many cups of the white ones i ate

    i slice the sausage (big or small as you want, put it in the crock pot. add the potatoes and the cans of green beans with the liquid. cook it on low 6-8 hours or until the potatoes are tender. I have done this in a pot on the stove... again cook until the potatoes are tender!
