Sopes

Today I was at the store looking for an alternative to my 180 calorie tortillas and I found something even better, sopes! At only 60 calories each, if I have two of them I'd still be ahead. They're made of the same stuff as corn tortillas, but are smaller and thicker, for an open faced sandwich or taco. I've had them in the restaurant before and loved them. When my daughter asked what they were my husband told her they were little pizzas. Her eyes lit up and she had to have one too! So I loaded mine up with the usual chicken, guacamole, cheese and salsa, and made one with just chicken and cheese for my daughter. She loved it and asked for another one! My yummy snack came out to less than 250 calories.

If you're lucky enough to live near the border, or have a Mexican grocery nearby, these things are great! I tried looking online briefly for some place that might deliver them if you live up north, but had little luck with that. The brand I got was Cacique if you're curious. The directions on the package say you should fry them, but I just warmed mine up in the microwave.

We have them around here too but just don't ever buy the ones that COSTCO sells because they are disgusting!!!!!!!!!! They lack flavor and firmness.. Fresh is the best!!!!!!
