any healthy shrimp scampi recipes

4 oz. whole wheat pasta, linguine or fettucine
1 tbsp. unsalted butter
1 tsp. evoo
5 cloves garlic, chopped
2 shallots, chopped
pinch of red pepper flakes
1/4 cup dry white wine
lemon juice
fresh parsley, chopped
1/2 lb. shrimp, peeled and deveined
Bring a pot of water to a boil. Add pasta and cook until done. Drain, set aside.
Melt butter and olive oil in a large skillet over medium. Add garlic, shallots and red pepper flakes. Cook 2-3 mins. Add white wine then shrimp. Cook shrimp 1-2 minutes or until cooked through.
Add pasta to skillet to coat in sauce. Plate, squeeze with lemon juice and sprinkle with parsley.
(serves 2-3, adjust as necessary)0 -

This is exactly how I make mine. I usually add more red pepper though. Delicious!0 -

Any recipe that calls for butter I use Brommel and Brown yogurt spread. It is non-hydrogenated expeller pressed veggie oils. It is lower calorie because it is watered down a bit too, but has great flavor and my mom's doctor reccomended it after she had her galbladder removed. I have been using it since, love a little on shrimp, fish and steamed or panfried veggies.0
