Help.. plateau I can't seem to get past

I have done everything.. ate more, ate less changed exercise routine multiple times... I have lost a total of 87 pounds and am going for 100 but I am just staying between 173-175 every week... I am so lost and feel like I am failing ;( I just don't know what more I can do? I do not eat carb rich foods such as rice, pasta, bread except one day a week. I struggle most days to get 1000 calories... recently I started not eating past 8pm... I try to get 60 oz of water in a day or more but I struggle with that at times too... I do have IBS and that causes a lot of bloating and irritation which also makes it hard to eat a lot some days.... please HELP I am so close but feel like I am stuck!!
