Lemon and Oregano Pork *with pics*

This was the best recipe I've made in a long time, so so tasty!! I served it with baby potatoes, green beans and mayo as recommended.

Ingredients: (This will serve 4, I used less as it was just for me)

- The zest and juice of 1 lemon
- 100g ready-made, natural coloured breadcrumbs
- 2tsp dried oregano
- 4 pork escalopes
- 2 tbsp sunflower oil
- lemon mayo (I had regular, light mayo), potatoes and green beans to serve.

Instructions:

1) On a plate, mix together the lemon zest, breadcrumbs and oregano. Pour the lemon juice onto another plate. Dip each pork escalope first into the lemon juice, and then into the breadcrumb mixture until well coated.
2) Heat the oil in a large frying pan over a high heat and fry the pork for 3-4 minutes on each side, until the crumbs are crisp and the pork is cooked through.
3) Serve each escalope with a spoonful of lemon mayonnaise, some potatoes and green beans.
