Any Vegan recipes???

Hi everyone! I've recently read, "Eat to Live" and have decided to include more vegan recipes in my diet. I am giving up dairy all together and no processed or fried foods. I want to eat 80-90% fruits and veggies. Anyone have any recipes or help for me???

    Black Bean Chili

    Ingredients:
    •2 cloves garlic, minced
    •1 small onion, diced
    •2 small sweet potatoes, peeled and chopped
    •2 medium carrots, sliced
    •1/2 red bell pepper, chopped (optional)
    •2 tbsp olive oil
    •1 15 ounce can black beans
    •1 15 ounce can diced tomatoes or tomato sauce
    •1/2 cup vegetable broth
    •1 tbsp chili powder
    •1 tsp cumin
    •1/2 tsp cayenne (or to taste)
    •1/2 tsp garlic powder
    •1/2 tsp salt
    •1/4 tsp black pepper

    Preparation:

    Sautee onions and garlic in olive oil for a minute or two, then add sweet potatoes, carrots and bell pepper until onions are soft, about 5-6 minutes.
    Reduce heat to medium low, and add remaining ingredients, stirring to combine well.

    Simmer, partially covered and stirring occasionally, for 20-25 minutes, until flavors have mingled and vegetables are cooked.

    Makes 5 servings of homemade black bean chili.

    I'm not a vegan, but I enjoy vegan/veg meals, and I'll swear by any book written by Isa Chandra Moskowitz and Terry Hope Romero. I own most of their books, and have learned a lot about cooking from them.

    They both wrote the ultimate, go-to vegan bible, called Veganomicon. It has a little bit of everything in there. It would be good for Betty Crocker's hippie niece:

    Isa also wrote a lower fat and calorie book, called Appetite for Reduction. The food isn't as "pretty" in this book, but it's still tasty, light weeknight kind of food. I don't really buy in to "low fat" when it comes to vegan food. My guess is that overweight vegans probably have too many simple starches, sugars (including the "natural" sugars, like Agave Nectar) and a lack of physical activity. Either way, the food in this book is still good and healthy, and nutrition info is provided for each recipe.

    My best advice to anyone who is going vegan is to make the change gradually, so as to accustom the taste buds and also retrain the brain.

    I post on the following website every now and then - it is not a vegan blog!
    We're just a group of friends that have committed to eating vegan once a week (although some of us are full-fledged vegans)
