Low Carb Oopsie Rolls

Does anyone know if Oopsie rolls go bad?? I made a huge batch of them a couple weeks ago and put them in a gallon ziploc bag in the fridge. I really forgot about them and was just looking at recipes and it reminded me of them! I went to check them and they are not soggy and not molded. They look just like they did the night I made them. Can someone tell me if there is any reason they wouldn't be ok to eat? Thanks!
